Printable Recipe


1½ cups water
1 teaspoon salt
1 tablespoon sugar
1 cup corn meal
1 cup grated cheddar cheese
oil for frying

Dipping Sauce

1 cup mayonnaise
1 teaspoon adobo sauce from a can of chipotles in adobo sauce (use more or less sauce to taste)

     Combine water, salt and sugar in a saucepan.  Bring to a boil.  Add the cornmeal.  Over medium heat, stir continuously until mixture pulls away from bottom and sides of pan.  Add cheese.  Mix well.
     Remove from heat.  Allow to cool slightly. Put about a tablespoon of dough into your hand.  Make a ball then roll to form a cylinder shape. 
     In a deep skillet, heat oil (1½" deep) to 375°F.  Fry surullitos without crowding until golden.  Drain on paper towels.
     Serve with dipping sauce.

Makes approx 36 surullitos.

Yes, these are a tasty little treat and definitely very frugal.
Any mild vegetable oil should work for these - canola, soy, corn etc. Whatever
your preference is. Thanks for stopping by.
