Printable Recipe

about 36 cherry tomatoes
1 (15 oz) can cannellini beans, rinsed and drained
¼ cup packed basil leaves, plus extra small leaves for garnishes
1 clove garlic, rough chopped
2 tablespoons olive oil
1 tablespoon lemon juice
¼-½ teaspoon salt

   Cut a thin slice off the top of each tomato. Scoop out and discard pulp and seeds. Invert tomatoes onto paper towels to drain.
     Combine remaining ingredients in a food processor.  Process until smooth.  
     Spoon the bean mixture into the tomatoes.  Garnish with reserved basil leaves.
