Printable Recipe

1 lb sliced bacon                                                 
4 cups frozen shredded hash brown potatoes                     
1/2 cup chopped onion                                         
1 small green pepper, diced                                 
8 eggs                                                         
1/2 cup milk                                                   
1 teaspoon salt                                              
1/4 pepper                                                    
2 cup shredded cheddar cheese

Preheat oven to 350°F.
Cut bacon into small pieces (about 1" wide). 
In a large skillet cook bacon until crisp.  Remove bacon from pan and set aside. Reserve 2 tablespoons bacon drippings in skillet.
Saute onions and green pepper in bacon dripping until softened.
In a large bowl, beat together eggs, milk, salt and pepper.  Stir in potatoes, shredded cheese, onions, peppers and reserved bacon.
Transfer mixture to a greased 9" X 13" pan. 
Bake for 30-40 minutes or until lightly browned.
