Printable Recipe

2 cups salsa
4 large eggs
4 - 6" corn tortillas
1 cup cheddar cheese
2 tablespoons chopped cilantro

Heat oven to 425 degrees.

Put the tortillas on a baking sheet in a single layer. Bake tortillas for 5 minutes, flip over and bake about 5 more minutes or until crisp. Remove from oven.

Meanwhile heat salsa in a 12" non-stick skillet over medium heat.  When salsa is hot use a spatula or the back of a large spoon to clear 4 - 3" circles in salsa.  Carefully break one egg in each of the circles. Cover skillet and cook over medium heat until eggs are  desired doneness.
 
Place tortillas on a plate and gently scoop one egg onto each tortilla.

When all eggs have been placed on tortillas spoon remaining salsa over eggs. Top with cheese and cilantro.

Serves 4
