2 tablespoons oil
1/2 cup chopped onion
1 rib celery, chopped
1 medium carrot, chopped
1 clove garlic, minced
4 cups milk
8 oz pasteurized process cheese product (such as Velveeta) - cut into chunks
1/2 (32 oz package) frozen Country Style Hash Brown potatoes
1 lb diced ham
1/2 teaspoon salt
1/8 teaspoon pepper


In a large soup pot saute onion, celery, carrot and garlic in oil until tender.
Add remaining ingredients and cook over medium heat stirring frequently until
cheese is melted and soup is hot.

Serves 4-6.
