1 lb ground beef                                                
1 medium onion, diced                                
2 stalks celery, sliced                                         
2 carrots, sliced                                                
1 small head cabbage, coarsely chopped                          
1 cup fresh or frozen green beans                               
1 teaspoon minced garlic  (2 cloves)                            
1 (14 1/2-ounce) can diced or stewed tomatoes                            
1 (15-ounce) can tomato sauce                                   
1 (15-ounce) can kidney beans, with juice                       
4 cups water                                                    
5 GF beef bouillon cubes (Herb Ox are GF)                      
1 teaspoon salt                                                 
1/2 teaspoon dried oregano                                      
1/2 teaspoon dried basil                                        
1/4 teaspoon pepper                                             
Parmesan cheese  for serving


Brown ground beef in a large soup pot. Drain.  Add remaining ingredients to pot except Parmesan .  Simmer, uncovered, over medium heat until vegetables are tender 30-45 minutes.   Serve with Parmesan cheese if desired.

Serves 6-8.
