Yellow Squash Casserole PDF Print E-mail

2 pounds yellow squash, diced
1 medium onion, chopped
1 tsp salt
1/2 cup milk
2 tablespoons cornstarch
2 tablespoons melted butter
2 eggs, slightly beaten
1/2 teaspoon garlic powder
1/4 teaspoon dried basil
1/4 teaspoon dried oregano
8 oz shredded cheddar cheese



Preheat oven to 350ºF.
Place squash, onion and salt in a large saucepan.  Add water to cover.  Simmer over medium heat until squash is tender (about 15-20 minutes).  Drain well and return to pan.  Mash squash with a potato masher.  
Combine milk and cornstarch in a small bowl.  Stir into squash.  Add remaining ingredients.  Stir to combine.
Transfer squash mixture to a greased 2 quart casserole dish.  Bake for 1 hour or until lightly browned and center is set.
