Printable Recipe

½ cup butter
2-3 apples - peeled, cored and thinly sliced
2 tablespoons brown sugar
2 tablespoons cornstarch
1½ cups milk
6 eggs
3 tablespoons sugar
1 teaspoon vanilla
1/2 teaspoon salt
1/4 teaspoon cinnamon

     Preheat oven to 425°F.
Melt butter in a skillet.   Add apple slices and brown sugar.  Sautee apples over medium heat until they start to soften, about 5 minutes.   Transfer apple mixture to a lightly greased 9"X13" baking pan.
Combine cornstarch and milk in a medium bowl and stir till smooth.  Add eggs and remaining ingredients to milk and beat with electric mixer or whisk or process in a blender until smooth.   Pour batter over apple mixture.
Bake, uncovered for 20 minutes or until set and golden brown.
Sprinkle with additional cinnamon and sugar if desired.
    Serves 6-8.

I'm severely allergic to corn and sulfites, so I can't use cornstarch in
anything. Do you think Arrowroot starch would work in this recipe? It sounds
delicious, if I can find a substitute for the cornstarch.
