Printable Recipe

lettuce or salad greens
1 lb deli sliced roast beef, cut into strips
12 cherry tomatoes, halved (or whole grape tomatoes or regular tomatoes chopped)
1 cucumber, thinly sliced
1/2 sweet onion, thinly sliced
1/2 cup finely chopped fresh cilantro

Dressing:

1/4 cup soy sauce (La Choy is GF)
1/4 cup lime juice
2 tablespoons water
1 clove garlic, minced
2 tablespoons brown sugar
1 jalapeno pepper, finely chopped (optional)

Arrange salad ingredients on 4 plates. Combine dressing ingredients in a small bowl.   Drizzle dressing on salads.

Serves 4.
