Printable Recipe


4 boneless, skinless chicken breast halves, cut up into strips
2 tablespoons oil
1/2 cup brown sugar
1/2 cup vinegar
1/2 teaspoon powdered ginger
1 tablespoon soy sauce (La Choy is GF)
1 green bell pepper, cut into short strips
1 (8 oz) can pineapple tidbits, juice reserved
2 tablespoons cornstarch
Hot cooked rice


Heat oil in a large skillet over medium high heat.  Saute chicken strips in oil 2-3 minutes stirring frequently. 
Combine brown sugar, vinegar, ginger and soy sauce in a small bowl. Pour over chicken.
Reduce heat, cover chicken and simmer for 15 minutes. Blend cornstarch with reserved pineapple juice and stir into skillet along with pepper strips and pineapple.  Cover and simmer for another 10 minutes or until chicken is done and pepper is tender.
Serve over rice if desired.
