Printable Recipe


1/2 cup chopped onions
2 tablespoons butter
1(14½ oz can) diced or stewed tomatoes
1½ cups whipping cream
2 tablespoons cornstarch
2 tablespoons water
½ cup grated Parmesan cheese
1 tablespoon brown sugar
½ teaspoon salt
¼ teaspoon pepper
1 lb shrimp, peeled and deveined
1 tablespoon fresh basil, chopped
Hot cooked rice



In a large skillet saute union in butter until tender.
Puree the tomatoes in a blender or food processor.  Add to onion mixture. 
Stir in whipping cream.
In a small bowl mix cornstarch with water until smooth.  Stir into mixture in pan.
Stir in Parmesan, brown sugar, salt, pepper and shrimp.  Simmer over medium low heat until thickened and shrimp is cooked.
Stir in basil.
Serve over rice if desired.
