Printable Recipe


1 cup dried lentils
1 medium tomato, chopped
1/2 green bell pepper, chopped
2-3 green onions, sliced
2 cloves garlic, minced
1/4 cup olive oil
1/4 cup water
2 tablespoons vinegar
12/ tablespoon Dijon mustard
1 tablespoon Worcestershire  sauce (Lea & Perrins is gluten free)
1/2 teaspoon salt



Cook lentils in 4 cups of water until tender - about 25 minutes.  Drain off excess water.   Transfer lentils to a medium bowl.  Stir in tomato, pepper and green onions.
Combine dressing ingredients in a small bowl.  Pour over lentils.  Serve chilled.
