Chiles Rellenos Casserole PDF Print E-mail

Printable Recipe


1 tablespoon butter, melted
7 (4 oz) cans whole green chilies, drained
8 oz shredded Monterey Jack cheese (I used Pepper Jack)
8 oz shredded cheddar cheese
1¼ cups milk
¼ cup cornstarch
5 eggs, lightly beaten
½ teaspoon salt


Preheat oven to 350°F.
Grease the bottom of a 9"X13" with the melted butter. 
Split chilies lengthwise; rinse and remove seeds. Layer chilies evenly in pan, then top with cheeses.  Set aside.
In a medium bowl, combine milk and cornstarch.  Mix until cornstarch is dissolved and mixture is smooth.  Add eggs and whisk until well mixed.   Pour mixture over chilies.
Bake, uncovered for 40-45 minutes, until lightly browned.

Serves 6-8

That looks fantastic! I've never had this dish before. It isn't served in our
