Printable Recipe


2 tablespoons cornstarch
2 teaspoons chili powder
1 lb beef sirloin or round, cut into bite sized pieces
2 tablespoons olive oil
1 cup water
4 cups small fresh broccoli florets
1 (14.5 oz) can Rotel tomatoes
1 tablespoon sugar (or equivalent desired sweetener)
2 teaspoons garlic salt

In a medium bowl combine cornstarch and chili powder.  Dredge meat in the cornstarch mixture.
In a Dutch oven or large skillet, heat the olive oil over medium-high heat.  Add the meat and cook, stirring frequently until lightly browned, about 2-3 minutes.   Remove meat to a plate, allowing any juices to remain in pan.  Set meat aside.
Add the water to the pan and scrape up any browned bits clinging to the bottom of the pan.   Add the broccoli and cook until most of the liquid is evaporated. 
Add tomatoes, sugar and garlic salt to pan and stir well.  Return beef and any accumulated juices to pan and cook until heated through, about 2 minutes.

Serves 4-6.
