4 tablespoons butter
2 medium onions, chopped
2 lbs zucchini, sliced ¼" thick
1½ teaspoons salt
½ teaspoon pepper
2 tablespoons cornstarch
1 cup milk
½ cup grated Parmesan

Preheat oven to 400°F.
Melt butter in a very large (12") skillet.   Add onions and cook over medium low heat until onions are tender but not browned, about 20 minutes.  Add the zucchini.  Cover pan and cook until zucchini is tender, about 10 minutes.
Combine cornstarch with milk.  Stir until cornstarch is dissolved and mixture is smooth.  Add salt and pepper and stir to combine.
Pour milk mixture into pan with zucchini and onions.  Cook over low heat a few minutes until sauce has thickened.    Remove from heat and transfer mixture to a 1½ quart casserole dish.   Sprinkle Parmesan cheese on top.
Bake for 20 minutes, or until bubbly and lightly browned.

Based on a recipe from The Barefoot Contessa.

Sounds very good, and the pic itself looks good enough to eat. I have some
yellow squash I want to use in this recipe. Thanks!
