Noodle-less Eggplant Lasagna PDF Print E-mail

Printable Recipe

2 large firm eggplants
½ cup olive oil
salt and pepper
1 lb lean ground beef
4 cups spaghetti sauce
1 (32 oz) container ricotta cheese
3 cups shredded mozzarella, divided
½ cup Parmesan cheese, divided
1 egg, lightly beaten


     Preheat oven to 425°F.
     Peel eggplants and slice into ¼" rounds.  Place eggplant slices in a single layer on lightly greased baking sheets.  Brush with ½ the olive oil.  Turn slices over and brush with remaining olive oil.  Season with salt and pepper.
     Roast eggplant in preheated oven for 15 min.  Turns slices over and roast an additional 5 minutes.  When eggplant is done reduce oven temperature to 350°F.
     Brown ground beef in a large skillet until done.  Add all except ½ cup of the spaghetti sauce to pan with meat.  Stir to combine.
     Spoon the ½ cup of spaghetti sauce in the bottom of a 9" X 13" pan.  Spread it around to cover bottom of pan. 
     Combine ricotta, 2 cups of the mozzarella, ¼ cup of the Parmesan cheese and egg.  Mix until well blended.
     Layer ½ of the eggplant slices in pan.  Top with ½ of the cheese mixture then ½ of the meat and sauce mixture.  Repeat with second layer of eggplant, cheese and sauce.
     Sprinkle with remaining 1 cup of mozzarella and ¼ cup of Parmesan.
     Bake 45 minutes at 350°F until heated through.
     Let stand 15 minutes before serving.

Serves 8-10

I'm a fan of eggplant parmigiana but have never tried it as a lasagna. It

Hey! As a Greek girl I take exception to you calling this lasagna! lol it is
Mousaka baby! my momma made this all the time when I was a kid, except using
lamb for the base instead of beef. hehehe..I was just teasing you. Very cool
recipe baby and thanks for sharing it on the two for tuesday recipe blog hop!

I made something similar to this a few weeks ago using summer squash and
eggplant, and everyone agreed the eggplant was better, so next time, I'll use
