Ham, Sweet Potato and Apple Casserole PDF Print E-mail

Printable Recipe


2 medium sweet potatoes, peeled and cut into bite sized cubes
2 medium apples (I used Granny Smith), cored and sliced (not peeled)
1 lb cooked ham, cut into bite sized cubes
1 medium onion, rough chopped
½ cup dried cranberries
½ cup apple cider or juice
2 tablespoons cornstarch
3 tablespoons butter, melted
2 tablespoons brown sugar
2 tablespoons maple syrup
1 tablespoon lemon juice
½ teaspoon cinnamon
½ teaspoon allspice

     Preheat oven to 375°F.
     In a medium saucepan combine sweet potatoes and enough water to cover.  Cook over medium heat until just tender.  Drain well and transfer to a 3 quart casserole dish.
     Add apples, ham, onion and cranberries to dish.  Stir to combine.
     In a small bowl combine apple cider or juice and cornstarch.  Stir until cornstarch is dissolved and mixture is smooth.  Add remaining ingredients and stir to combine.  Pour mixture evenly over casserole.
     Cover and bake for 1 hour.

Thanks so much for this recipe... (I'm here from blessed with grace) I will have
to try this. Our family just went gluten/yeast/sugar/milk free 3 wks ago. I was
slowly working that way, but decided fast like to change. It has been worth it,
but there are rough days!! I have 3 boys 5, almost 3 and 16mths. We've weathered
the worst, now is the fun of finding new and tasty recipes. And we love sweet
potatoes, but we shouldn't have apples yet. So I'm might try it without. Can't
wait to see all the rest of your recipes!!

That looks fabulous. I think it would also be great without the ham to make it
more of a side dish. I'm thinking of trying it and maybe making it for
Thanksgiving this year.
