Printable Recipe


1 lb dried pinto beans - soaked overnight and drained of soaking water
3 lbs pork (I use whatever is on sale - chops, ribs, roast etc - if using a roast cut it into a few pieces)
1 (4 oz) can chopped green chilies
1 medium onion chopped
2 cloves garlic, chopped
2 tablespoons chili powder
1 tablespoon cumin
2 teaspoons salt
4 cups water
suggested toppings - grated cheese, sour cream, tomatoes, onions, salsa, shredded lettuce, cilantro, crushed corn chips


     Combine all ingredients in a 6 quart slow cooker.  Cook on low 8-9 hours or on high 5-6 hours.
     Remove any bones and/or fat from pork and shred meat with 2 forks.
     Serve with desired toppings.

Serves 8-10

Hi, the dish sounds great, especially for the slow cooker, but I'm not sure how
this is a chalupa. They are basically a "taco" and I must have missed
them in the ingredients list. But, what the hey, wouldn't take long to warm up a
few corn tortillas!

Hi Harold, yes, I realize these are not true Chalupas. The recipe I based this
on is from Southern Living and that is what they called it so I just left it at
that. In our house we actually call this pork and beans.
