Sweet Potatoes and Black Beans PDF Print E-mail

3 medium sweet potatoes, peeled and cut into ¾" cubes (3 cups)
¾ cup orange juice
2 teaspoons cornstarch
1 teaspoon pumpkin pie spice, apple pie spice or cinnamon
¼ teaspoon ground cumin
1 (15 oz) can black beans, rinsed and drained
1 cup cooked rice (I used brown rice)

    Place sweet potatoes in a 2-quart saucepan; add enough water just to cover.  Heat to boiling; reduce heat.  Cover and simmer 10-12 minutes or until tender; drain and set aside in a bowl.
    Mix orange juice, cornstarch, pie spice and cumin in same saucepan.  Heat to boiling.  Boil about 1 minute, stirring constantly, until thickened.
    Stir in sweet potatoes, beans and rice.  Cook about 2 minutes or until hot.

Serves 4.
