Printable Recipe


1 lb lean ground beef
4 tablespoons butter
8 oz fresh mushrooms, sliced
1 medium onion, chopped
2 stalks celery, chopped
2 medium carrots, chopped
3/4 cup wild rice
3/4 cup brown rice
3½ cups chicken broth
1/3 cup soy sauce (La Choy is GF)
1 (5 oz) can water chestnuts, drained and sliced
1 cup frozen peas
1/2 cup slivered almonds, toasted

     Brown meat in a dutch oven or large pot until no longer pink.  Remove meat from pan and drain if necessary.
     Melt butter in pan over medium heat.  Add mushrooms, onion, celery and carrots to pan.  Saute vegetables until they start to soften, about 5 minutes.
     Add wild rice, brown rice, chicken broth, soy sauce and water chestnuts to pan.  Cover and simmer over medium low heat until liquid is absorbed and rice is tender.  Stir in peas and almonds during last 5 minutes of cooking. 

Serves 6-8.
