Cream of Asparagus Soup PDF Print E-mail

2 lbs asparagus spears
2 tablespoons butter
1 medium onion, chopped
4 cups chicken or vegetable stock
¼ cup fresh basil, chopped
1 teaspoon celery salt
1 cup heavy cream
salt and pepper

     Break off woody ends from the asparagus and trim off the tips.  Blanch the tips in boiling water for 1-2 minutes.  Remove tips from hot water and immediately immerse in ice water.  Remove from ice water and set aside.  Cut the asparagus stems into pieces.
    Melt butter in a large pan and cook onion in butter over medium low heat until it starts to soften, about 3-4 minutes.  Add the chopped asparagus pieces into the pan and cook for 1-2 minutes, stirring constantly. 
    Add stock, basil and celery salt to pan.  Bring to a boil then reduce heat and simmer, covered for 30 minutes.  Check that the asparagus is well cooked and soft.  If not, cover and cook another 10 minutes.  Set aside and allow to cool slightly.
   Process soup in a blender in batches until smooth then return soup to the pan.  Add cream and reheat.  Do not allow soup to boil.  Season to taste with salt and pepper.  (I added 1 teaspoon salt and ½ teaspoon pepper) 
     Add asparagus tips to pan and serve immediately.

Looks like a really good soup, i remember my sister theresa making a tourine of
leek soup for Thanksgiving many many years ago and i still remember it... this
would be nice for a start to a Thanksgiving meal!

I love cream of asparagus soup - it is just so creamy and delicious! I have
never made it though - this is a great recipe, thanks for sharing it with us at

if i had to pick 1 veggie to eat the rest of my life, i think it would be
asparagus..i am a huge fan. i think this soup would go over very big in my
