Yankee Chili Rellenos PDF Print E-mail

Printable Recipe

8  medium/large green bell peppers
2 medium onions, chopped
2 tablespoons vegetable oil
1 lb mild cheddar cheese, shredded
3 eggs, lightly beaten
½ cup milk
2½ teaspoons dried oregano

     Preheat oven to broil.
     Wash and dry peppers.  Cut in quarters and remove seeds, core and membranes.  Place peppers skin side up on a cookie sheet lined with foil.  Place pan on oven rack positioned  4-5 inches from the broiler element.  Broil peppers for about 10 minutes or until the skin turns black and blisters.  Remove peppers from oven and place in a plastic bag or in a bowl and cover with a damp towel.  This will make peeling easier.  Once cooled, peel off blackened skin and cut the peppers into smaller pieces.
     Reduce oven temperature to 350°F.
     Cook onions in oil over medium heat in a large skillet until soft but not browned.  Remove from heat and let cool about 10 minutes.  Add remaining in ingredients.  Stir to combine.  Stir in roasted peppers.  Transfer mixture to a greased baking dish or 9" X 13" pan. 
     Bake 45-50 minutes until set.

What a great recipe! I just love chili rellenos but poblano chilis are hard to
find in Toronto so I love that this recipe uses bell peppers instead. Thank you

I do love Chili Rellenos, and appreciate casserole versions of recipes, for
making things easier. I'll probably use canned chilies to keep it even simpler.
