2 cups chopped tomatoes (about 2 medium)
2/3 cup chopped fresh parsley
1½ tablespoons chopped fresh basil
2 tablespoons capers, drained
1 tablespoon balsamic vinegar
¼ teaspoon salt
8 eggplant slices, cut diagonally into ½" slices (I used one medium eggplant)
2 tablespoons olive oil plus extra for greasing pan
8 slices provolone cheese


     Preheat oven to 450°F.
     Combine tomato, parsley, basil, capers, vinegar, and salt in a bowl.  Set aside.
     Place eggplant slices on a baking sheet greased with olive oil.  Use 2 tablespoons of olive oil to brush on eggplant slices.  Turn slices over and brush other side too.
    Bake at 450°F for 10 minutes then turn eggplant slices over.  Return to oven and bake 2 more minutes, or until almost tender.
    Top each slice of eggplant with a slice of provolone.  If cheese slices are larger than eggplant slices cut cheese in ½ and double stack it.  Return to oven and bake for 1 minute or until cheese melts.
     Remove from baking sheet onto individual plates.  Spoon tomato mixture over each.

Yield: 4 servings (2 slices each)
