Printable Recipe

2½-3 cups leftover mashed potatoes (if you don't have leftover mashed potatoes see alternate crust below)
2 medium green peppers, sliced
2 medium onions, quartered and sliced
8 oz sliced button mushrooms
2 tablespoons butter
1 lb deli roast beef, rough chopped
8 oz cheese of choice - I used cheddar    

     Preheat oven to 350°F.
     Press mashed potatoes onto the bottom and up the sides of a greased 10" pie plate.  Bake for 20 minutes. 
     Meanwhile prepare filling.  Saute peppers, onions and mushrooms in butter until soft.  Add roast beef to pan and combine.  Transfer filling to pie plate over potatoes.  Top with cheese.  Return to oven and bake for 20 more minutes or until heated through and cheese is melted.

ALTERNATE CRUST

1 package (20 ounces) refrigerated shredded hash brown potatoes
1/3 cup butter, melted

     In a large bowl, combine the hash browns and butter. Press onto the bottom and up the sides of a greased 10" pie plate. Bake at 350° for 25-30 minutes or until edges are lightly browned.

Whenever I have to bring a dish to pass, I make this (with the hash browns) in
