2 cups instant mashed Potatoes
1 & ½ cups instant powdered milk
4 teaspoons Chicken Flavored Bouillon Granules
    or 4 Chicken Flavored Bouillon Cubes - crushed (Herb OX are GF)
1 & ½ teaspoons salt

Suggested optional add-ins - cheese, dried or fresh herbs, spices, bacon, sour cream

Combine all ingredients in a large bowl, mixing until completely blended. Store in airtight container until ready to use.

To serve: Place 1/2 cup mix in a mug or soup bowl and add 1 cup boiling water. Stir until smooth. Add any desired optional add-ins. Let soup set 1 to 2 minutes to thicken slightly.
Use more mix if you want a thicker soup.

 I found some similar recipes for potato soup mixes online and in some cookbooks but I experimented with different seasoning options every time I made up a batch so I started putting together this basic mix and add whatever herbs or seasonings I have handy or I am in the mood for that day - but I always add cheese!
