Printable Recipe

2 cups picante sauce
1 (15 oz can) black beans, rinsed and drained
1 cup frozen corn
1 teaspoon ground cumin
1 teaspoon chili powder
2 beef bouillon cubes
½-1 chipotle chilie,  from can chipotle in adobo (optional)
¼ teaspoon salt
2-3 lb beef roast (I used a bottom round roast)
2 tablespoons cornstarch
2 tablespoons water
chopped cilantro

     Add all ingredients except roast, corn starch, water and cilantro to a slow cooker.  Stir to combine.   Place roast in slow cooker.  Cover and cook on low 8 hours.
     Combine cornstarch with water.  Add to slow cooker with meat, turn to high and continue cooking about 30 more minutes until thickened.
    Top with chopped cilantro when serving.

Serves 4-6
