Mushroom Rice Pilaf PDF Print E-mail

1 cup short grain brown rice
2 cups beef broth
1 1/4 cups chopped fresh mushrooms
2/3 cup chopped onion
2 tbsp. chopped fresh parsley
1 tbsp. olive oil
2 cloves garlic, minced
1/8 tsp. pepper

     Combine all ingredients in a 3-quart saucepan. Bring to a boil, reduce heat to low, cover and simmer 50 minutes. Remove from heat and let stand, covered, 10 minutes. Stir and serve immediately.

Makes 4-6 servings.

This pilaf looks really good! I'll have to try it as it seems pilaf is really
the only way my husband will eat rice!

This might be just the thing to make with those mushrooms that I need to use up.
I'm vegetarian so I would probably use veggie broth. Still quite tasty I'm sure!
