Slow Cooker Honey Chipotle Pulled Pork PDF Print E-mail

Printable Recipe

3 lbs pork (I use whatever is on sale - ribs, chops, roast etc)
1 cup ketchup
¾ cup honey
2 tablespoons chipotles in adobo (I process a whole can of chipotles in adobo in a food processor as soon as I open it and keep it in the fridge then use 2 tablespoons of the blended mixture - otherwise just chop up 2 of the peppers from the can)

     Place pork in a lightly greased slow cooker.  Cook on low 8 hours. 
     Drain meat and discard any liquid that remains in the slow cooker.
     Remove any bones and/or fat from pork and shred meat with 2 forks. 
     Place shredded meat in a bowl.
     Combine ketchup, honey and chipotles in a small bowl.  Pour over meat.  Stir to combine.

Note: I do not add liquid when cooking the pork in the slow cooker.  It will create liquid as it cooks.  For this reason I do not add the sauce to the slow cooker while the meat is cooking as the sauce gets watered down.
