Tuscany Rice and Bean Soup PDF Print E-mail

8 oz Italian Sausage, casings removed
6 cups chicken broth
2 (14.5 oz) cans diced tomatoes
1 (15.5 oz) can Great Northern Beans, undrained
1 cup uncooked rice
½ teaspoon salt
¼ teaspoon pepper
¼ dried oregano

     Brown sausage in a soup pot or dutch oven over medium-high heat, about 6 minutes.   Drain fat.
     Add remaining ingredients.  Bring to a boil then reduce heat to medium.  Cover and simmer 15-20 minutes, or until rice is cooked. 

Serves 6.

Oh my dear this is one of my favorite types of soup. I have made it before with
ground beef but never with sausage and I am sure that makes it super soup!

Hi Carol, I just wanted to let you know that I kept stopping back here and
looking at this recipe longingly and so I decided to try it and it turned out
GREAT! My daughter does not do tomato chunks and so I used some vegetable puree
in place of the canned tomatoes so my soup was a bit smoother. I am going to
feature it on I tried it at a moderate life this friday and link back to your

Awesome! Glad you liked it. I have to agree with your daughter - I'm not crazy
about chunky tomatoes in soups and stews either even though I do love tomatoes -
I always use the petite diced ones but I really like your idea of the vegetable
puree. I'll definitely give that a try.
