Chicken, Spinach and Rice Soup PDF Print E-mail

2 tablespoons olive oil
2- 8 oz boneless skinless chicken breast halves, cut into bite sized chunks
1 medium onion, chopped
2 cloves garlic, minced
1 (10 oz) package fresh spinach, stems removed, torn into bite-sized pieces
6 cups chicken broth
1 (14.5 oz) can diced tomatoes
¾ cup uncooked rice
½ teaspoon salt
½ teaspoon pepper
½ teaspoon dried basil
     
     In a soup pot cook chicken, onion and garlic in oil until chicken is lightly browned and onion is tender - about 5 minutes.  Add remaining ingredients.  Cover and simmer over medium-low heat 15-20 minutes until rice is cooked.

Serves 4
