Creamy Chicken Spinach and Rice Skillet PDF Print E-mail

Printable Recipe

2 tablespoons olive oil, divided
2 boneless, skinless chicken breast halves, cut into bite sized pieces
1 medium red pepper, chopped
1 medium onion, chopped
2 cloves garlic, minced
1 (6 oz) bag fresh baby spinach, rough chopped (or regular fresh spinach, stems removed)
1 teaspoon salt
½ teaspoon pepper
¼ teaspoon nutmeg
1 cup ricotta
½ cup milk
2 cups cooked rice (cooked in chicken broth) OR if you have leftover rice not cooked in chicken broth add 2 teaspoons chicken bouillon (I use Herb Ox)
1/3 cup chopped fresh basil


       Heat 1 tablespoon of the olive oil in a large skillet over med-high heat.  Add the chicken pieces.  Cook chicken, stirring frequently until it starts to brown.  Remove chicken from pan and set aside.
     Add remaining tablespoon olive oil to pan.   Add the red pepper and onion to pan and cook, stirring frequently until they start to soften, about 5 minutes.   Add garlic and continue cooking, stirring frequently, another 2 minutes.
    Add spinach, salt, pepper and nutmeg to pan.  Cook until spinach is wilted, about 3 minutes.
    Add ricotta, milk until the sauce is creamy.  Add the reserved chicken, rice and basil to the pan.  Cook, stirring frequently until heated through, about 5 minutes.

Serves 4
