Roasted Vegetable Medley PDF Print E-mail

1 large onion, cut into 1" pieces
1 lb zucchini, cut into 1" pieces
1 lb yellow squash, cut into 1" pieces
2 large red (or green) bell peppers, cut into 1" pieces
1 tablespoon olive oil
1 teaspoon Italian seasoning
½ teaspoon salt
¼ teaspoon pepper
3 cloves garlic, minced

     Preheat oven to 425°F.
     Place all ingredients except garlic in a large bowl.  Toss veggies to coat with oil and seasonings.  Place in a single layer on a lightly greased 15"X10"X1" baking sheet.  Use 2 pans if necessary.
     Bake, uncovered for 20 minutes.  Add garlic and stir to combine.  Bake an additional 10-15 minutes or until vegetables are crisp tender.

Serves 4

These are some of our favorite veggies too. I'm loving all of the veggies

Hi Miz Helen, Lucky you getting fresh veggies from your garden! I don't have a
garden of my own but I do have a great farmers market that I visit every week so
at least I get them fresh and cheap! I really love roasted veggies the best.
