Ham Potato and Green Bean Casserole PDF Print E-mail

Printable Recipe

6 cups peeled, cubed, cooked potatoes (I used boiled potatoes but leftover baked potatoes or frozen hash browns would work too)
2 cups frozen cut green beans, thawed
2 cups cubed fully cooked ham
2 cups shredded Cheddar cheese
2 tablespoons dried minced onion
2½ cups milk
3 tablespoons cornstarch
2 chicken bouillon cubes (I used Herb Ox)
1/3 cup sour cream
1/3 cup mayonnaise

     Preheat oven to 350°F.
     In a large bowl place potatoes, beans, ham, cheese and minced onion. 
     Combine milk and cornstarch in a medium saucepan.  Stir until cornstarch is dissolved and mixture is smooth.  Add bouillon cubes.  Heat mixture over medium heat, stirring frequently until thickened.  Transfer mixture to bowl with potato mixture.  Add sour cream and mayonnaise.  Stir till all ingredients are well combined.
    Transfer mixture to a greased 9" X 13" X 2" pan or casserole dish.
    Bake, uncovered for 45 minutes.

Serves 4-6
