Pasta with Basil, Tomatoes and Mozzarella PDF Print E-mail

Printable Recipe

8 oz spaghetti or linguine type pasta (I used Thai Kitchen Stir-fry Rice Noodles)
1 clove garlic, minced
½ cup chopped onion
3 tablespoons olive oil
2-3 medium tomatoes, diced (about 1½ cups)
2 oz mozzarella cheese, cut into small cubes
2 tablespoons chopped fresh basil
salt and pepper to taste

     Cook pasta according to package directions.  Drain.
     Meanwhile, saute garlic and onions in olive oil in a large skillet until tender and fragrant.  Transfer to a medium bowl and stir in remaining ingredients.  Pasta should be hot when you stir it in so it partially melts the cheese.

Serves 4.
