Printable Recipe

4 tablespoons olive oil - divided
2 boneless, skinless chicken breasts, cut into bite sized pieces
1 cup diced onion
4 cloves garlic, minced
1 cup uncooked rice
2 cups chicken broth
1 medium zucchini, cut into bite sized pieces
½ lb fresh green beans, cut into 1" pieces
1 (16 oz) can pinto beans, rinsed and drained
1 teaspoon salt
¼ teaspoon pepper
12 cherry tomatoes, cut ½
1/3 cup chopped fresh basil
½ cup grated Parmesan cheese

      Heat 2 tablespoons of the olive oil in a large skillet or dutch oven over med-high heat.  Add the chicken pieces.  Cook chicken, stirring frequently until it starts to brown.  Remove chicken from pan and set aside.
     Add remaining olive oil to pan.   Add the onion and garlic to pan and cook, stirring frequently until they start to soften, about 5 minutes.
     Lower the heat to medium. Return chicken to the pan and add the rice, chicken broth, zucchini, green beans, pinto beans salt and pepper.  Stir to combine. Cover and cook until rice is done and liquid is absorbed, about 15-20 minutes.
     Remove from heat.  Stir in tomatoes, basil and Parmesan cheese.

Serves 4.

Dinner time isn't too far from now & this has my tummy growling...do you
deliver?
Seriously though, I get so excited when I see a dish that looks
delicious & then when I look over the ingredients & have everything it calls
for! Only thing is, the green beans in my garden aren't ready yet so I'd need
to sub the fresh gr.beans for frozen...that should be okay, right?

Yes,
frozen green bean would work fine for this. This has really become one of my
new favorites.
I made it last night and had the left overs for lunch today and
it was just as good the second time around.
