Printable Recipe

2 tablespoons sesame oil, divided
1 lb boneless, skinless chicken breasts, cut into bite sized pieces
2 cups broccoli florets
1 small red pepper, sliced
½ cup onion slices
½ cup snow peas
1 (8 oz) can sliced water chestnuts, drained
2 cloves garlic, minced
1 teaspoon five-spice powder
½ teaspoon salt
1 cup chicken broth
1 tablespoon cornstarch
hot cooked rice

Heat 1 tablespoon of the sesame oil in a wok or large nonstick skillet over medium-high heat.  Add chicken; stir-fry 6-8 minutes or until chicken is cooked through.  Remove chicken from pan and set aside.
Add remaining tablespoon of sesame oil to pan and heat until oil is hot.  Add broccoli, pepper, onion, snow peas, water chestnuts and garlic.  Stir-fry 5-8 minutes or until vegetables are crisp tender.  Sprinkle with five-spice powder and salt.  Stir-fry for one minute.  Return chicken to pan.
Combine chicken broth with cornstarch.  Stir until cornstarch is dissolved.  Add mixture to pan.
Bring to a boil and boil for 1-2 minutes, stirring constantly until sauce is thickened.
     Serve over rice.

Serves 4.
