Black Bean Pilaf with Sun Dried Tomatoes PDF Print E-mail

1 tablespoon oil from a jar of oil packed sun-dried tomatoes
1 medium onion, chopped
1 (15½ oz) can black beans, drained and rinsed
½ cup drained, chopped sun-dried tomatoes packed in oil
½ teaspoon salt
¼ teaspoon ground black pepper
2 cups cooked brown rice (cooked in chicken broth)
2 teaspoons chopped fresh oregano or 1 teaspoon dried oregano

   Cook onions in oil in a large skillet over medium high heat until onions start to soften, about 3 minutes.  Remove from heat.  Stir in beans, sun-dried tomatoes, salt and pepper.  Continue cooking until heated through, about 5 minutes.  Stir in rice and oregano.  Serve immediately.

Serves 6.

this looks like a perfect salad for any time of year. i just so happen to have
homemade sundried tomatoes in my fridge right now...this just might make it on
