Parmesan Herb Polenta Squares PDF Print E-mail

3½ cups milk
1½ cups cornmeal
3 eggs, well beaten
1 cup grated Parmesan cheese
¼ cup melted butter
2 teaspoons chopped fresh herbs of choice (I used rosemary)
1 teaspoon salt
½ teaspoon ground black pepper

     Preheat oven to 425°F.
     Heat milk to scalding in a large saucepan.  Reduce heat.  Gradually stir in cornmeal.  Cook over medium heat stirring constantly, until thick - about 5 minutes.  Remove from heat.  Add remaining ingredients to pan and stir until mixture is smooth and well combined.
    Transfer to a lightly greased 9" x 13" x 2" pan.  Bake for 30-35 minutes or until golden brown.  Serve hot.

Serves 8-10.

Hi Yolanda, I actually have some of this in the freezer. I'll let you know
when I take some out and eat it. I was thinking about working out a smaller
batch of this too as it really makes a lot. I'll work on that later. Thanks
