Fish Taco Salad with Cilantro Cream Dressing PDF Print E-mail

Printable Recipe

1 lb mild flavored fish filets (I used talapia)
seafood seasoning (I used Chef Paul Prudhomme's Seafood Magic)
lettuce
other suggested toppings - tomatoes, onions, avocado, cheese etc

CILANTRO CREAM DRESSING:

½ cup mayonnaise
¼ cup sour cream
1 tablespoon finely chopped chives
¼ cup finely chopped cilantro
1 medium jalapeno, finely chopped (or more or less to taste)
½ teaspoon sugar
1 teaspoon lime juice
1 tablespoon milk

    Season fish filets with seafood seasoning.   Cook fish by desired cooking method.  (I used my George Foreman grill)
Other suggested cooking methods -
Bake - about 20-25 minutes at 350°F or until fish flakes easily with a fork.  Baking time will depend on thickness of fish.
Blacken -  Heat skillet to very hot.  Add 1 tablespoon butter, melted and 1 tablespoon mild cooking oil to pan. Place fish in hot pan.  Cook 2-3 minutes on each side or until fish is opaque and can be flaked with a fork.
Grill - Grill until fish flakes easily and is cooked through - about 2-3 minutes on each side.
    Place cooked fish on a bed of lettuce and top with desired toppings.  

Combine dressing ingredients in a small bowl until well blended.
Serve with salads.

Makes 2 entree sized salads or 4 smaller salads.
