Maple Walnut and Apple Rice Custard PDF Print E-mail

Printable Recipe

½ cup rice
3½ cups milk
½ cup pure maple syrup
¼ teaspoon salt
3 eggs, beaten
1 teaspoon vanilla
½ cup chopped walnuts
2 apples, peeled and chopped fine
½ cup raisins, optional

Preheat oven to 350°F.
Combine rice, milk and maple syrup in a medium sauce pan.  Bring to a boil then reduce heat to medium and cook until rice is soft, about 15 minutes.  Slowly add about ½ cup of the hot mixture to the beaten eggs while stirring constantly.  (This will temper the eggs)  Add egg mixture and remaining ingredients to the pan with the rice.  Stir to combine. 
     Transfer mixture to a lightly greased 2 quart casserole dish.  Bake, uncovered until firm, about 45 minutes.
Serve warm or cold.   Serve with whipped cream sweetened with maple syrup if desired.

Serves 8-10

I adore maple desserts. This one could be a great breakfast, too. It looks so
pretty the way you presented it!

Thanks Kristen! Yeah, I think this would make a good breakfast or brunch. I
ate some hot and cold and it was good both ways. I love anything maple flavored
too. It's probably a good thing that maple syrup is so expensive or I would
probably be drinking it!
