4 slices bacon, cut into small pieces
3 lbs zucchini (about 6 medium)
½ teaspoon garlic powder
2 teaspoons chili powder
¼ teaspoon ground cayenne pepper (optional)
1 teaspoon salt
1½ cups salsa
1½ cups shredded cheddar - divided

     Cook bacon in a large skillet over medium heat until crisp.
     Add remaining ingredients except cheese.  Stir to combine. Simmer over medium heat, stirring occasionally until zucchini is tender; about 15 minutes.
     Add  1 cup of the cheese and continue cooking about another minute or until cheese has melted.
     Top with remaining cheese.
