Herb Roasted Sweet Potatoes

2 lbs sweet potatoes washed, peeled and cut into bite sized chunks (about 1” cubes)
1 cloves garlic, minced
1 teaspoon fresh rosemary, chopped
½ teaspoon dried thyme
½ teaspoon dried sage
2 tablespoons olive oil
1 teaspoon salt

Preheat oven to 425°F.
Combine all ingredients in a bowl or zip top bag. Stir or shake until sweet potatoes are evenly coated with seasonings.
Spread sweet potatoes evenly on a shallow baking sheet such as a rimmed cookie sheet.
Bake 35-40 minutes, stirring occasionally until sweet potatoes are tender.

This recipe was adapted from a recipe that was in the Orlando Sentinel. The original recipe calls for fresh rosemary, dried thyme and dried sage. I have tried the recipe with all fresh herbs and with all dried herbs and I think the original combination is best - the fresh rosemary gives the recipe wonderful flavor and the dried thyme and dried sage also gives flavor while holding up well to the high roasting temperature.
