2 cups instant potato flakes
2 cups milk
2 cups shredded cheddar cheese
Oil for frying

 

     Combine potato flakes, milk and cheese in a medium bowl. Mix well. Allow to sit several minutes until potato flakes absorb the milk.
     Form the mixture into 8 patties. Fry in a skillet or on a griddle in a small amount of oil over medium high heat until lightly browned - about 5 minutes on each side.  Serve immediately.

NOTE:  Sometimes instead of making patties and frying them I just put the mixture in a casserole dish and bake it.  350°F for 25-30 minutes or until heated through.
