Printable Recipe

 



1 lb lean ground beef
1 medium onion, chopped
1 cup uncooked rice
2 cups beef broth
1 (16 oz) can pinto beans, drained and rinsed
2 tablespoons chili powder
1 teaspoon ground cumin
1 teaspoon salt

    In a large skillet, over medium high heat, stirring occasionally,  cook ground beef with onion until meat is cooked.  Drain if necessary.
    Reduce heat to medium.  Add remaining ingredients and stir to combine.  Cover and cook until rice is cooked and liquid is absorbed, about 20 minutes.

Serves 4-6.

Mm...that dish looks fantastic! Top it with cheese, sour cream, and diced
tomatoes, and eat it with a bag of corn chips. That's what I'd do.

it was awesome, and so easy to put together, it will be a staple for us, when it
is the kids (12 and 14 years) turn to put dinner on the table.
I added 1 cup of
salsa to the recipe, doubled the beans, and omitted the salt. Next time I might
add some corn to brighten it up (it looked very bland).
It was even better the
next day reheated
