Printable Recipe


2 fresh ripe freestone peaches, peeled, halved and stone removed
1 1/2 cups fresh raspberries
2 tablespoons sugar
1 pint vanilla ice cream
slivered almonds, optional


To prepare peaches -
Bring a pot of water to a boil.
With a sharp knife, make a small X into the rounded end of the peach (opposite the stem end). Place peaches in boiling water for 30 seconds.  Remove peaches from water. Skin should then peel off easily. Cut the peach in half and remove the stone.

To make syrup - 
Combine raspberries and sugar in a medium bowl.  Mash mixture together with a fork. Press the raspberry mixture through a fine mesh sieve to remove seeds.

To assemble the Peach Melba -
Place one peach half on serving plate.  Top with some of the raspberry sauce.  Top with a scoop of ice cream and more sauce.   Sprinkle slivered almonds on top if desired.

Serves 4
