Printable Recipe

¼ cup vegetable oil
2 tablespoons vinegar
½ teaspoon dried basil
½ teaspoon dried oregano
¼ teaspoon salt
1 clove garlic, minced
1 medium red bell pepper, cut into bite sized pieces
1 medium green bell pepper, cut into bite sized pieces
1 medium yellow bell pepper, cut into bite sized pieces
1 small sweet onion (such as Vidalia or Walla Walla) thinly sliced

     Combine oil, vinegar, basil, oregano, salt and garlic in a medium bowl.  Stir to combine.  Add peppers and onions and toss to coat.
     Best if allowed to marinate several hours.

Serves 4-6

Oh, bell peppers are awesome, and such a good source of nutrients. I usually
manage to eat them before I add them to their destination dish, but maybe I'll
pull out some self-discipline and try this with olive oil and rice wine
vinegar... white wine vinegar? Not sure which would be better.

Hi Stephanie, I used regular white vinegar but I think rice wine vinegar would

I used to not eat bell peppers, but when I finally celebrated my first Cinco de
Mayo and ate fajitas.... I started to like it..now I love eating them..so I am
sure I would love that bell pepper salad

I don't usually like uncooked peppers and onions - although my husband does.
Aside from my preferences, this looks delicious and fresh. Wouldn't mind
