Printable Recipe

1/2 cup chopped onion
1 clove garlic, chopped
2 cups chicken broth (or 2 cups water and 2 chicken bouillon cubes)
1/4 teaspoon black pepper
1 teaspoon dried basil
1 (14 1/2-ounce) can diced (or stewed) tomatoes
1 (15-ounce) can northern beans (or other white beans)
2 boneless skinless chicken breast halves (if frozen no need to thaw)
1 (10-ounce) box frozen spinach (no need to thaw)
salt to taste

Combine all ingredients in crock pot. Cook on low 6-8 hours.
Cut up the chicken in bite sized pieces before putting it in the crock
pot or after it is cooked.
