Black Bean Cakes with Cilantro Cream Sauce PDF Print

2 (15-ounce) cans black beans, rinsed and well drained
1 medium jalapeño, seeds and stem removed, finely chopped                                 
1/2 cup finely chopped onion                               
1/2 cup chopped cilantro                                     
1/2 teaspoon cumin                                            
1/2 teaspoon chili powder
1/2 teaspoon salt
dash pepper                                 
Oil, for frying    

CILANTRO CREAM SAUCE                                          

1/2 cup mayonnaise       
1/4 cup sour cream                                            
1/4 cup finely chopped cilantro
1/2 teaspoon sugar                                    

Place all bean cake ingredients, except oil in a mixing bowl and combine, partially mashing black beans. Use your hands or a  potato masher - hands work best.  Mixture should be partially chunky - don't over mash or they won't hold together well.
Shape bean mixture into 2"-3" patties and fry in a small amount of oil over medium heat until cooked through - about 2 minutes on each side.  They will be soft when hot so handle gently so they hold together. 
Serve hot with Cilantro Cream Sauce.

To make cilantro cream sauce - combine sauce ingredients in a small bowl until well blended.

This is the second black bean burger, we got at Chaya's Meatless Mondays and
they both are different and delicious looking. I like the sour cream topping.
I would think this is very tasty and the cilantro cream dressing would set the
tast off to highlight it.

I wanted to mention to you that your posts to Comfy Cook go to Spam. Each time,
I say it is not Spam and put into the regular posts and the next post goes to
Spam. Any ideas on this.

It is not a problem because I just move it to the
blog but it is weird.
