Rice Nut Loaf PDF Print E-mail

3 cups cooked brown rice
2 cups shredded Cheddar cheese
4 eggs, lightly beaten
1/2 cup chopped onion
1 cup shredded carrots
1/2 cup instant potato flakes
1/4 cup chopped walnuts
1/4 cup chopped sunflower kernels
1/4 cup sesame seeds
1/2 teaspoon garlic powder
1/2 teaspoon Italian Seasoning
1/2 teaspoon salt
1/4 teaspoon ground black pepper
jar or homemade spaghetti sauce (optional)



Preheat oven to 350°F.
Combine all ingredients in a large bowl.   Stir until well mixed.
Transfer mixture to a greased 9" loaf pan.
Bake 50-60 minutes until firm.  Let cool 10 minutes then remove from pan and slice to serve.
Top with sauce if desired.
