Sweet Potato Cornbread PDF Print

2  cups plain cornmeal
4 teaspoons baking powder
1/4  cup  sugar
1  teaspoon  ground cinnamon
1 1/2  cups  milk
1  cup  mashed cooked sweet potato
1/4  cup  butter, melted
1  large egg, beaten

 

Whisk together all ingredients, whisking just until dry ingredients are moistened. Spoon batter into a greased 8-inch cast-iron skillet or baking pan.

Bake at 425° for 20 to 25 minutes or until a wooden pick inserted in center comes out clean.

This looks very yummy. I'll be trying it soon and replacing the milk with soy
and the egg with an egg replacer...we'll see how it works out!
